The sun is still shining and we are cooling off with these fab mojito-popsicles.
Yes, frozen cocktails, or poptails, are the craze right now. Of course we had to try! As it can be hard to freeze alcohol we went a different way as we froze sugar syrup, lime juice and mint leaves overnight. We then served it up in a glass with some rum and soda stirring as the popsickle melted. It blended perfectly and kept cold. Yummy!
Mojito-poptails
2,5 dl lime juice
2.5 dl simple syrup
Fresh mint leaves
Rum
Soda
Mix lime juice and syrup and freeze with mint leaves as popsickles overnight. Pour 2 cl rum in each glass. Add one popsickle and some extra mint leaves and lime. Top with soda. Serve right away.
