May is filled with all kinds of celebrations here in Norway, and on every cake table with respect for it self, you will find bløtkake, a layered cream cake with berries. Get the recipe here!
Cream cake with vanilla and fresh berries
1,5 dl sugar
2,5 dl all purpose flour
1 ts baking powder
2 dl rasberry jam
1 l vanilla cream
5 dl whipped cream
2 tsp sugar
Heat the oven to 160 degrees. Whisk egg and sugar well until it is thick and fluffy. Sift the flour and baking powder into the mix and gently fold it in. Pour into a buttered round spring form (22-24 centimeters). Bake in the lower part of the oven for about 40 minutes. Turn the form upside down on a rack and let it cool completely.
Use a sharp knife and divide the cake into three layers. Fill with jam, vanilla cream and sliced banana between each layer. Whip the cream stiff with sugar and decorate the whole cake with whipped cream.
Top with fresh berries and meringues.
